I was SO excited to receive a copy of Kelsey Nixon’s new book “Kitchen Confidence” to review. And not just because the book showed up with honey popcorn and honey popcorn ingredients. Hubba hubba.

I’ve known Kelsey for a while and I could not be more impressed with what a rockstar she is, (I mean she’s personal friends with Bobbly Flay) but this book just pushed my respect for the woman over the edge. It’s amazing.

I love cooking and baking books, so when I buy them I devour them. I read them like a novel. I really appreciate when books go above and beyond with resources and photography, and this book does not disappoint.

As you may or may not know, I’m always looking for an excuse to make a layered cake, so of course I tested out her Essential Yellow Birthday Cake with Buttercream Frosting first. I loved it.

This is a denser cake, but boy oh boy a moist cake! I hope you can get over the use of the word moist, because it was a must. The recipe doesn’t call for cake flour, which is also a bonus, because I always seem to be running out of cake flour.

“Kitchen Confidence” has SO many fabulous recipes I can’t wait to try. And I’m not just saying this because I love Kelsey, in fact I’m kind of a jerk and if I didn’t like the book or the cake I wouldn’t have mentioned it. Hahaha. But for reals.

I added the blackberries to the center of the cake because is there anything better than fresh berries swimming in buttercream? I think not. I specifically chose the color of the cake (one drop of Americolor Soft Gel Paste in Teal) to compliment the berries.

I made this for my friend and photographer gem Heather to help her celebrate turning 30! Except I didn’t tell her mom I was making a cake so when I showed up with it her mom had just made her one too! Hahaha CAKE FOR DAYS! Oh well, it’s the thought and calories that count, right?

I COULD NOT decide how to decorate this cake! So this is not how I delivered the cake, though these options look good in retrospect!

I thought it would be fun to share the like 5 ways I decorated the cake, because I took pictures of all of them! So this first picture is the simplest, most rustic. I love using what’s inside the cake ON TOP of the cake.

But you all know I’m neither simple, nor rustic, so I wanted to see what piping some little dollops would look like.

Then I couldn’t decide if this was very birthday-ish. So I scraped all the frosting off and tried two other options! Haha.

But I thought I’d share these first because they are simple and might be a great option for your next cake endeavor! If you follow along on IG you’ve seen one option, and I’m thinking my butterfly option I tried might have been the prettiest. But you’ll have to wait til you’ve seen them all to tell me which is your favorite!

    It’s the best cake ever. Every recipe I ever make of Kelsey’s is a home run, but this cake is my number one fav. The salt in the buttercream…..mmmmmmmmmmmmmmmmmmmmmmmmm
