Sweet Reads with Amy: Pink Lemonade Icebox Cake


I’m so freaking excited to introduce you to one of my most favorite people…Amy Scott! Amy is a phenomenal writer and creative soul. One I’ve always looked up to and admired. She has agreed to help us get a little culture here on The Alison Show. Amy will highlight fun books and then share a dessert recipe inspired by it in a series she has brilliantly named “Sweet Reads.”

Mindy Kaling is like the best famous friend I never had. Reading Is Everyone Hanging Out Without Me makes me, like every other woman I know, want to know her in real life. I mean, girlfriend has an US Weekly obsession that rivals only my own with its passion and scope, on top of which she procrastinates like a mofo while Getting Things Done. Total hero.

Whether Mindy is telling us about how she totally killed it as a babysitter, or giving us friendly advice (“I say if you love something, set it in a small cage and pester and smother it with love until it either loves you back or dies”), or dropping delicious gossip on her Office costars, Mindy manages to keep things real–all while keeping the pages turning.

Even if I hated the book (I don’t), Mindy would have earned my eternal respect for this single and extremely true truism: “If I’m at a party where I’m not enjoying myself, I will put some cookies in my jacket pocket and leave without saying good bye.” Who hasn’t been there?

So, without further ado, I give you Pink Lemonade Icebox Cake, the only cake I recommend eating while reading Mindy Kaling’s amazing book. I love this cake because it doesn’t require an oven or any sort of kitchen skills. It takes five minutes to put together and emerges from the fridge looking like a pink, delicious goddess of awesome. Store bought cookies are prime for icebox cake, but if you are an over achiever, feel free to use your favorite cookie recipe. You will definitely want to top things off with a fringe garland made using Alison’s wonderful tassels tutorial.

Pink Lemonade Icebox Cake
Inspired by Ina Garten


2 cups heavy whipping cream
12 ounces cream cheese
1/2 cup sugar
zest of one lemon
juice of half a lemon
2-3 drops red food coloring
1 1/2 packages of lemon cookie thins (I used Trader Joe’s Meyer Lemon Cookie Thins)
2 cups whipped topping, tinted pink

In a very cold metal bowl, whip cream, cream cheese, sugar, lemon zest, and lemon juice together until stiff peaks form, about 5-6 minutes. Add food coloring until the whipped cream resembles cotton candy.

Layer cookies on the bottom of a nine-inch springform pan, using bits of cookie to fill in any gaps. Top the cookie layer with a third of the whipped cream mix. Alternate cookie and whipped topping ending on a cookie layer. Tint your whipped topping with a drop or two of red food coloring until it is nice and pink. Spread on top of the final cookie layer.

Cover with plastic wrap and refrigerate for 6-8 hours. Remove from fridge and use a knife to go around the edges of the pan, loosening the cake. Carefully release cake from the pan and top with a festive garland. Serves 8.

*Notes: Lemon curd will make this cake sing. If you can’t find lemon cookie thins, use vanilla wafers or another mild crunchy cookie. You can also substitute a tub of whipped topping for the heavy cream, making this dessert so easy you will weep.
