Last week I tried a new tomato soup recipe reccomended by my bestie Jessica, and it was SO GOOD I had to share. The recipe comes from the fabulous blog Spoon Fork Bacon. Isn’t that the best name ever? I adore it.
The soup is easy to make, but you roast the tomatoes for about an hour so you will want to do that ahead of time. Also, the recipe called for fresh basil, but the basil I bought was disgusting, so I used all dried basil and it was still delicious. I also used the best brand I could find of canned Italian crushed tomatoes with basil and garlic. The recipe calls for just regular canned tomatoes. But other than those simple changes I did the recipe just as instructed and it was a hit with the ladies I had over for lunch! Next time I’m going to add some orzo pasta to it like they do at Zupas!
