You guys, I’m such a celebrity. Nikki of The Salty Pineapple asked me to contribute to her amazing celebration of National Picnic Week! Did you know it’s National Picnic Week?! No? Well I didn’t either until Nikki told me. But you know I love a reason to PARTY.

My goal for my picnic contribution was: a cold drink. You know how much I love one of those, and I wanted one that would stay cold throughout the picnic and would be easy to transport. By making these in mason jars you can seal them up for transfer, and as the slush melts it chills and flavors your drink. This idea would work with any frozen slush base (I know how many of THOSE recipes you must have on hand…).
I chose to use watermelon because it screams summer.
RECIPE FOR WATERMELON-COCONUT SLUSH:
makes 6 drinks
In a blender mix:
3 cups watermelon
1 cup lite coconut milk (from can)
the juice and zest of 3-4 limes
1/3 cup sugar
Mix, mix, mix, and then add more of whatever you think it needs to taste. Ha, you can’t go wrong! Then fill your mason jars 1/4 to a 1/3 full of the mix and freeze! Serve at the picnic with Gingerale, 7up, or any clear fizzy drink.
I served mine with huge Boba tea straws, but you’ll want to add a spoon so you can dig down and get that slush. Take it from Gigi.
