Well it looks like it’s just sort of a baked goods kind of week! Last weekend we celebrated my mother-in-laws birthday, and even though she’s a diehard pie person, she requested that I make her the same cake I made for Ginger for her Fancy Pants Birthday Party!
I shared a few snippets of this on Instagram, and lots of people requested the recipe! Luckily I just used a combo of other people’s fabulous recipes, so it is very easy to share!
I’m going to be very serious for a minute (as I usually am about things of no consequence) this is like, the best cake ever. On a whim I combined the elements and they happened to make magic. If you like lemon and blueberries, and cake, I cannot imagine how you would not MOAN over this cake. Gigi is obsessed with blueberries.
For the cake layers I used this AMAZING vanilla cake recipe from Sweetapoltia. Also, if you haven’t made a layer cake before, she has some really good tips and tricks, that I highly recommend reading.
For between the layers I made some lemon curd (it’s very easy) and then piled on loads of blueberries.
Both the lemon curd and the lemon blueberry buttercream frosting are from the great blog, My Baking Addiction. I knew how yummy they were from making the cupcakes (that they are intended for) a few months ago. You can halve the lemon curd recipe, but you’ll want all that icing.
When I made my mother-in-laws cake I used EVEN more blueberries between the layers, and it was delicious. You don’t even need ice cream with this cake. For Gigi’s cake I used some crushed rock candy to add some bling. But I didn’t put that on her mini 2-layer cake for obvious reasons. Also, I didn’t use lemon curd for her cake because I didn’t know if she’d be into it.
All in all it was a super yummy cake and I’m confident you’ll love it. Just like I love you. And cake.
And sugar. And Diet Dr. Pepper, and my baby who is screaming, has ripped off her bib, and is trying to escape from her high chair. Obviously I didn’t present her highness with enough blueberries.
